Is Corn Bread Vegan?

This question came in a while back, but we needed time for prep. And well, to answer…corn bread is not normally vegan. Most recipes call for milk (maybe buttermilk), eggs or honey. Some box mixes actually contain LARD! But you know what, corn bread can certainly be made vegan! I can’t vouch for corn bread at your local spot , but I can certainly give you a recipe to make it yourself.

In the isitvegan? household I like to make it as a side dish to chili served with avocado and lime wedges. And then I like to eat the leftover cornbread for breakfast. This is how I do it:

1 1/2 Cups Fine Corn Meal
3/4 Cup all-purpose flour
2/3 Cup sugar
1 Tbs. baking powder
1 tsp salt
1 Cup Soymilk + 1 tsp vinegar
1/3 Cup applesauce
3 Tbs melted Earth Balance

Preheat the oven to 400 and grease a 9×9 pan.

Combine the dry ingredients in a large bowl. Combine the wet ingredients in another bowl (or a 4 cup liquid measure.)
Stir the wet mix into the dry until it is just mixed. No need to overdo it. Pour into the batter into the baking pan. Bake for 25 mins.

  1. I wonder if you could use Almond or Rice milk as well? I and my daughter are allergic to dairy and soy

    1. I suggest soy because it’s nice & fatty. Rice and almond milk aren’t as fatty. You may have to add some fat, but give it a shot.

  2. I make cornbread every day. All I use is canola or coconut oil, any non dairymilk. We’re from the south, I don’t want my bread to taste sweet. I also don’t and never have used eggs. My family loves this method.
