Are pancakes vegan?
Answer: they certainly can be.
Pancakes are a simple breakfast food beloved by kids on snow days, all night diner goers, and hopefully you. Whether you like them with just a bit of maple syrup or bursting with blueberries, there’s probably a pancake recipe for you.
The vegan factor.
A traditional pancake batter will use eggs and milk in the batter… However, this does not mean that delicious vegan pancakes can’t be had…even when using a boxed mix. For instance, Aunt Jemima The Original and Whole Wheat versions are accidentally vegan. Substitute nondairy milk of choice and 2 Tablespoons of applesauce for the egg. A slightly healthier take would be Bob’s Red Mill 7 Grain Pancake Mix.
Or you can make your own very easily. There is no shortage of vegan pancake recipes. Vegan Diner has a killer Multigrain Pancake Mix Recipe that we’ve been using. Whole wheat flour, quick oats, cornmeal, brown sugar and baking powder combine to make an excellent pancake. We mix in blueberries, chocolate chips or mined apple slices.
